Cooking With Kitty #6

Kitty would like you to cast your mind back this week to a day long ago (approximately 14 days anyway) to when we shared our recipe for. Then we mentioned that there were a number of uses for this sweet treat and this week we are going to share the most obvious one.

Apple Cinnamon Muffins

For this particular recipe I started with a basic muffin recipe provided by Australian Woman’s Weekly and then added my apple butter for the flavour. I used approximately half my mix (3/4 cup) but I think it could have easiely had more added to give it a bit of zing.


Ingredients

Basic muffin recipe

  • 2 cup self-raising flour
  • 1/2 cup caster sugar
  • 3/4 cup milk
  • 125 gram melted, slightly cooled butter
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup apple butter

Ready in just three steps, this cheesy zucchini and potato gratin is a delicious alternative to a classic potato bake.Recipe tipThe zucchini on top will shrink, so make sure you overlap the pieces. Using a mandoline to slice zucchini, potatoes and onion is quicker than using a knife.

Method

Basic muffin recipe

  • Preheat oven to 180°C (160°C fan-forced). Lightly grease a 12-hole muffin pan or line with paper patty cases.
  • Sift flour into a large bowl. Stir in sugar.
  • In a large jug, whisk milk, butter, eggs and vanilla together.
  • Make a well in centre of dry ingredients. Add milk mixture all at once and apple butter. Mix lightly, until just combined. Be careful not to over-mix. Divide mixture among recesses.
  • Bake 15-20 minutes, until cooked when tested with a skewer. Cool in pan 5 minutes before transferring to a wire rack to cool completely. Dust with icing sugar, if liked.
